Potatoes are a member of the nightshade family, along with eggplant, tomatoes and capsicums. Potatoes can be bought fresh, canned, dehydrated or fried. There are many different varieties of potato which vary in texture and flavour.

Nutrition information
In their natural state, potatoes are a good source of vitamin C, potassium and vitamin B6 and also contain thiamin, niacin and folate. Potato contains very little fat, but is often cooked in oil and eaten as chips, french fries, or crisps, which increases the fat content. Unpeeled potatoes are more nutritous than peeled ones because their skin is a concentrated source of nutrients.

Potatoes are a major contributor to overall vegetable consumption in Australia (and other Western societies).

Potatoes are very versatile
They can be baked, fried, boiled, microwave, roasted or mashed
Try adding boiled and diced potato to salads
Use them in soups, croquettes, pancakes, or as a pie topping
